Welcome to Hyson Beverage Consulting

Kempton obtained his Sommelier certificate in 2001 from The International Sommelier Guild. Kemptona past Treasurer and  Director of C.A.P.S.A.C.  (Canadian Association of Professional Sommeliers / Atlantic Chapter).

Living in Nova Scotia, Kempton is a fan of cool climate, food-friendly wines, particularly Pinot Noir, Riesling and French-American hybrids. Kempton has over 29 years of Restaurant / Hotel Management experience and loves to teach wine education to all levels of expertise.

Kempton was a guest Sommelier on the Holland America Line Prinsendam for a 14 day cruise in 2006.  He also caters smaller wine & food events, consults for several Hotels and Restaurants creating wine lists and performing staff training, and leads tours of Nova Scotia wineries.

A typical wine and food pairing event in the comfort of your own home would consist of the following:
For 8-10 people:

  • 4p.m.: I take over your kitchen
  • 6:30-7: Reception: Martini & champagne cocktail paired with appetizers.
  • 7-7:30: A quick lesson on how to look at, smell & taste wines.
  • 7:30: Pour 3 whites for each person, discuss, compare. Then I prepare foods to go with each (3-4 bite portions…smoked salmon pizza, grilled chicken, etc.).
  • 8:30: Pour everyone three reds, discuss, compare. Prepare foods (mushroom ravioli, lamb shank, rib steak, etc.) to go with each wine.
  • 10p.m.: Start cleaning up.

Guests will not be hungry and not feel intimidated. I am the anti-wine snob. I usually average the wines to be in the $18-20 range, which allows for some good cheapies but also some nicer wines as well.

$80 per person

$35 without the food & reception

Add $5 per person for Port / Stilton / Chocolate.
